Christmas bakery is a good old tradition all over the world. It brings coziness and warmth in cold winter days and increases the anticipation of Christmas.

Posting in many Xmas forums a lot of people asked for typical german Xmas recipes. Although the main aspect of this site are our artworks, we launched a new recipes category to share good recipes.

Christmas Bakery

Almond Stollen (round about 30 pieces)

Ingredients

  • 400 gram wheat flour (Typ 405)
  • 100 gram ground almonds
  • 1 pinch salt
  • 1/8 liter lukewarm milk
  • 1 dice fresh yeast
  • 3 packets vanilla sugar
  • 150 gram candied orange peel (cubed)
  • 150 gram candied lemon peel (cubed)
  • 150 gram creamy butter

Further:

  • 75 gram butter (melted)
  • 50 gram powdered sugar

Steps

Mix wheat flour, almonds and salt in a big bowl and make a cavity in the middle, melt the yeast in the milk, fill it in the cavity and make a pulp with some flour.

Cover the bowl and let the pulp rise for 15 minutes at a warm place. Add vanilla sugar, candied orange and lemon peel and the butter. Then mix a dough and cover it again. Let it rise at a warm place for 45 - 60 minutes. Then knead the dough and make an oval (3-4 cm) and let the dough overlap. Put baking paper on a baking pan, and the dough oval on it. Let it rise for 15 minutes.

Put the pan in the bottom of the oven and bake for 70 minutes at 160-175 degrees Celsius. Prick the top with a wooden skewer several times and put half of the melted butter onto it. Then sprinkle it with the half of the powdered sugar. Repeat the procedure after 5 minutes.

Put the Stollen in Aluminum foil and let it rest for one week at least.
